I’m sure I am not the first charcutourist to come to Corsica with an extra suitcase for sausage. Sausage made from wild boar. Spicy salami-style sausage. Sausage made from pork livers soaked in red wine, stuffed into casings and hung above the fireplace to smoke. So when I met my first local, a food-obsessed 20-something named Olympe Ricco, I immediately asked her where I could find the island’s best. She shot me a look of utter incredulity: “But the sausage is fini for the season.”.
